Primary Purpose:
The Chef de Cuisine is responsible for managing the day-to-day operations of the restaurant's kitchen while serving as an ambassador and liaison with the operations team. Responsibilities are centered around culinary execution, and the financial success of the business. An advocate for the guest experience working collaboratively with the General Manager to ensure the culinary team produces the highest quality of food for guests and events according to Atrium Hospitality standards.

Work Performed:

The Chef de Cuisine will be tasked with the following duties, responsibilities, and assignments:
  • Developing results-oriented associates through effective training, evaluation, motivation, coaching and counseling in accordance with Atrium's Core Values; including leading the team in a humble, professional and responsible manner.
  • Using passion and knowledge of food, to develop new menus;
  • Utilize forecasts to write employee schedules balancing business levels and productivity drivers;
  • Utilize forecasts to predict product level needs and prep volumes;
  • Create product PAR levels;
  • Write daily prep lists;
  • Place product orders with Vendors utilizing Purchase Orders;
  • Source products and setting up new vendors;
  • Create seasonal menus, costing bulk recipes and plate recipes;
  • Calculate and follow Theoretical food costs;
  • Understand and implement all food safety and health department requirements;
  • Maintain a clean and safe environment for our guests and employees;
  • Make appearances for charity and marketing events;
  • Create Station guides, prep books, cleaning lists, order guides and checklists;
  • Understand the P&L and having the ability to review the G/L and Chart of Accounts for accuracy;
  • Maintain a declining budget for purchases;
  • Maintain a receiving log;
  • Maintain cooler temp logs;
  • Creating and maintaining a HACCP program when required;
  • Conduct accurate inventories;
  • Excellent attention to detail, display a sense of urgency and demonstrate strong organizational and communication skills.
  • Follow all company safety and security policies and procedures, including reporting accidents, injuries and unsafe work conditions to management;
  • Any and all other work as required to complete the primary purpose of the position
